JAFFA BUTTERFLY CUP CAKES
Carrot & orange cup cakes with a beautiful butterfly
decoration on top are great treat for parties.
Before you begin:

Makes: 12
Heres what you need:
125g reduced salt butter, softened
1/2 cup caster sugar
2 eggs, beaten
1 tablespoon golden syrup
Grated rind of 1 orange
1 1/2 cups wholemeal self raising flour
3 tablespoons cocoa
1/2 teaspoon bicarbonate of soda
410g can Edgell Dutch Baby
Carrots, drained well and mashed
Juice of 1 orange (1/4 cup)
low-fat cream cheese Filling:250g tub light spreadable
cream cheese
2 teaspoon vanilla essence
2 tablespoons icing sugar
Extra icing sugar for dusting
Heres how to do it:

In
large bowl beat together butter and sugar until light
and fluffy. Gradually beat in eggs, golden syrup and
orange rind. |

Sift
together self raising flour, cocoa and bicarbonate
of soda. Fold into egg mixture along with mashed Edgell
Dutch Baby Carrots and orange juice until well
combined. |

Spoon
mixture into a greased 12 x 1/2 cup muffin pan and
bake in a preheated oven at 180:C for 20 - 25 minutes. |

Allow
cake to stand for 10 minutes before turning out onto
a wire rack to cool. |

Cream
cheese filling: In a small bowl combine all ingredients. |

Using
a sharp pointed knife cut a 1 cm deep circle from
the top of each cake; cut circle in half to make butterfly
"wings". Fill cavities with cream cheese
mixture and place "wings" on top to form
the butterfly. Dust with extra icing sugar. |
Setting Up Time:
20 minutes
Cooking Time: 2025 minutes
HOT TIP: Mandarin or small
orange segments can be placed down the centre of the butterfly
wings to form the "body" of the butterfly.
