17. MERMAID BIRTHDAY CAKE

Before you begin:
Kitchens can be dangerous so make sure you have just read the Kitchen Safety Checklist.
Check with Mum or Dad that you are allowed to cook.
So the food doesn’t get any germs wash your hands with warm soapy water and dry them well.
Read the recipe through before you begin and get out all the equipment and ingredients you will need.
Don’t forget to have fun, and the best cooks ALWAYS clean up their mess.

Here’s what you need:

2 packets butter cake mixes (choose chocolate, vanilla or one of each and 'marble' the mixture).
50g melted butter
1 quantity of butter icing (recipe below)
Green jelly crystals
Blue jelly crystals
Approximately 24 mint leaf lollies
Licorice straps cut into strips
1 raspberry lolly for belly button
4-6 'freckles' for waist
8-10 red and blue candy coated choc buttons for swimsuit
Coloured candy sprinkles for swimsuit top
Red piping gel for mouth
2 blue candy coated choc buttons for eyes
Licorice strips cut into eyelashes
Green and red sherbet coated straps cut into strips for hair and seaweed
8 chocolate shells
Lolly fish
Candles

Butter Icing:
250g butter, softened
1 teaspoon vanilla essence
500g packet icing sugar
3 tablespoons milk

Here’s how to do it:
Prepare cake mixes following packet directions and pour into a greased and baking paper lined 27cm x 36cm oblong baking dish or cake pan. Bake following packet directions. Allow to cool in pan for 10 minutes then turn out on a wire rack to cool.
