2. CHERRY MALLOWS

Before you begin:
Kitchens can be dangerous so make sure you have just read the Kitchen Safety Checklist.
Check with Mum or Dad that you are allowed to cook.
So the food doesn’t get any germs wash your hands with warm soapy water and dry them well.
Read the recipe through before you begin and get out all the equipment and ingredients you will need.
Don’t forget to have fun, and the best cooks ALWAYS clean up their mess.

Makes: 6

Here’s what you need:
425g can John West Stoneless Black Cherries, drained and juice set aside
1 1/2 teaspoons gelatine
1/4 cup cream or vanilla yoghurt
1/2 cup mini marshmallows

Here’s how to do it:

1. In a small saucepan heat cherry juice (do not boil). Add gelatine and whisk with a fork until gelatine has dissolved. Allow to cool and refrigerate until semi-set.
2. Using an electric mixer beat the semi-set juice until light and fluffy. Add cream or yoghurt and beat for a further 30 seconds. Fold in marshmallows.
3. Place 3–4 cherries into small serving glasses and top with marshmallow mixture. Refrigerate until set. (Use reserve cherries to decorate if desired.)
