25. CREAMED CORN & BACON PIES...YUM

Before you begin:
Kitchens can be dangerous so make sure you have just read the Kitchen Safety Checklist.
Check with Mum or Dad that you are allowed to cook.
So the food doesn’t get any germs wash your hands with warm soapy water and dry them well.
Read the recipe through before you begin and get out all the equipment and ingredients you will need.
Don’t forget to have fun, and the best cooks ALWAYS clean up their mess.

Makes: 12

Here’s what you need:
• 4 sheets wholemeal Mountain bread
• 420g can Edgell Creamed Corn
• 2 eggs, beaten
• 1 cup baby spinach leaves, finely shredded
• 1 tablespoon chopped fresh parsley
• 1/4 cup grated low fat cheese
• 2 rashers lean bacon, finely shredded

Here’s how to do it:
1. Using a 10cm pastry cutter cut out 12 circles from 4 sheets mountain bread and gently press into a greased 12 x 1/2 cup muffin tray.
2. In a medium bowl combine Edgell Creamed Corn, eggs, spinach leaves, parsley and grated cheese. Season with pepper.
3. Spoon corn mixture into each bread cup and sprinkle with bacon. Bake in a preheated oven at 200:C for 18–20 minutes.

Setting Up Time: 10 minutes

Cooking Time:
18 minutes

HOT TIP: Add finely chopped fresh chives to mixture for extra flavour.
