BEETROOT HUMMUS DIP
Great for a party or a filling for awesome sandwiches.
Before you begin:

the equipment and ingredients you will need. |

Makes: 3
cups
Heres what you need:
250g tub light cream cheese
1 clove garlic, crushed
300g can Edgell Chick Peas,
well drained
425g can Edgell Sliced Beetroot,
well drained
1/2 cup fresh mint leaves
2 teaspoons cumin
2 tablespoons lemon juice
Wholemeal Pita bread, carrot and celery for serving
Heres how
to do it:
1.Place first seven ingredients
together in a food processor. Blend until smooth.
2.Spoon onto a serving dish.
Serve with warm pita bread and sticks of carrot and celery.
Setting Up Time: 10 minutes
HOT TIP: This
hummus can also be used as a spread on burgers or souvlaki
wraps.
