78. Crispy Tuna Burgers
 


Before you begin:

Kitchens can be dangerous so make sure you have just read the Kitchen Safety Checklist.
Check with Mum or Dad that you are allowed to cook.
So the food doesn’t get any germs, wash your hands with warm soapy water and dry them well.
Read the recipe through before you begin and get out all the equipment and ingredients you will need.
Don’t forget to have fun, and the best cooks ALWAYS clean up their mess.

Here’s what you use
• can opener
• cup measures
• tablespoon measures
• medium-sized bowls
• kitchen knife
• chopping board
• large bowl
• fork
• 3 shallow bowls
• baking paper
• egg lifter
• 2 dessertspoons
• bread knife

Here’s what you need
• 425g can John West Tuna in Brine,
  well drained
• 1 3/4 cups cooked mashed potato
• 2 tablespoons chopped fresh parsley
• 1 tablespoon lemon juice
• 1 egg, lightly beaten
• 1/4 cup dry breadcrumbs

Coating:
• 1 egg
• 1 tablespoon water
• 1/4 cup plain flour
• 1 cup dry breadcrumbs
• 6 medium-sized bread rolls
• 6 medium-sized butter lettuce leaves
• 2 medium tomatoes, sliced
• approximately 2 tablespoons mayonnaise
• 2 medium-sized carrots

Here’s how to do it

Step 1
Place tuna, potato, parsley, lemon juice, lightly beaten egg and 1/4 cup of breadcrumbs into a large bowl and, using a fork, mix well. Divide the mixture evenly into six and shape into patties.


 
Step 2
In a medium-sized bowl beat the egg and water with a fork. Place flour and breadcrumbs each into separate medium bowls. Wash your hands. Take one of the patties and coat with flour, then dip in the egg and coat in breadcrumbs making sure you pat the breadcrumbs firmly onto the patty. Repeat coating with remaining patties and then wash all the ‘gunk’ off your hands.

 
Step 3
Line a shallow baking tray with baking paper and arrange the patties onto the tray. Lightly spray with oil and cook in a preheated oven at 180°C for 30 minutes.

Step 4
While the patties are cooking, wash lettuce leaves, cut the rolls in half and cut the carrots into sticks. Arrange the lettuce and tomato onto the bottom half of the rolls.
Put on your oven mitts and, once patties are cooked, remove them from the oven. Using an egg lifter, place each patty onto a prepared roll and finish with a dollop of mayonnaise. Add the top of the rolls. Serve with carrot sticks.

Cooking Time: 30 minutes

HOT TIP: 2 large potatoes, once cooked, should make approximately 1 3/4 cups of mash.
