17. Mermaid Cake Step by Step
 


Before you begin:

Kitchens can be dangerous so make sure you have just read the Kitchen Safety Checklist.
Check with Mum or Dad that you are allowed to cook.
So the food doesn’t get any germs, wash your hands with warm soapy water and dry them well.
Read the recipe through before you begin and get out all the equipment and ingredients you will need.
Don’t forget to have fun, and the best cooks ALWAYS clean up their mess.

Butter Icing:
2 packets butter cake mixes
  (choose chocolate, vanilla or one of
  each and 'marble' the mixture).
50g melted butter
1 quantity of butter icing
  (recipe below)
Green jelly crystals
Blue jelly crystals
Approximately 24 mint leaf lollies
Licorice straps cut into strips
1 raspberry lolly for belly button
4-6 'freckles' for waist
8-10 red and blue candy coated
  choc buttons for swimsuit
Coloured candy sprinkles for
  swimsuit top
Red piping gel for mouth
2 blue candy coated choc buttons
  for eyes
Licorice strips cut into eyelashes
Green and red sherbet coated
  straps cut into strips for hair and
  seaweed
• 8 chocolate shells
• Lolly fish
Candles

Butter Icing:
250g butter, softened
1 teaspoon vanilla essence
500g packet icing sugar
3 tablespoons milk

Here’s how to do it :

Step 1
Draw the shape of the mermaid onto baking paper and cut out a template.

Place template onto cake.

 
Step 3
Using a small sharp knife, cut out the shape, saving the extra cake pieces.

Step 4
Place mermaid onto a foil-lined tray (an oven tray turned upside down can be used). Using the two top pieces of cake, shape them into the mermaid’s tail.

 
Step 5
Brush cake with melted butter. (This stops the crumbs from crumbling off into the icing and makes it easier to coat the cake with icing.) Allow to set for 10 minutes in a cool place.

 
Step 6
Colour half the prepared icing with green food colour and coat top and sides of mermaid’s tail. Sprinkle top with green jelly crystals.
Tint three-quarters of remaining icing a pale flesh colour using just one or two drops each of red and yellow food colouring and spread over head and body. Spread remaining white icing onto the foil tray and sprinkle with blue jelly crystals for the sea.

Decorate tail with mint leaves. Outline mermaid with strips of licorice. Add raspberry lolly for the belly button. Decorate waist with freckles and bathing suit top with candy coated choc buttons and sprinkles. Pipe red gel for mouth and nose. Add blue choc coated candy buttons for eyes and liquorice eyelashes. Arrange strips of green for hair and strips of red for seaweed. Place chocolate shells, lolly fish and candles as shown on completed cake.

 
 

Butter Icing:
Using an electric mixer, beat butter until creamed and pale. Gradually beat in icing sugar and milk alternately, beating well after each addition and scraping down the sides of the bowl occasionally.

Makes: 1 birthday cake to serve approximately 20

Setting Up Time: 1 hour

HOT TIP: The mermaid cake takes a little longer to put together but it is worth the time spent on it. The cake can be done in all different shades of pink if preferred.
