In a large frying pan, over a medium heat, heat 1 tablespoon
oil, add the diced bacon and, stirring with a wooden spoon
pan, fry for 1 minute. Add the frozen
Birds
Eye Country Harvest Peas, Corn and Capsicum and
cook for a further 2 minutes, stirring occasionally. Stir
in the rice and spring onions and stir fry until just
heated through (it will take about 2-3 minutes). Remove
pan from the heat and cover with a lid. In a small bowl
place the eggs, water and salt and whisk with a fork until
well mixed. Take another small frying pan and place over
a medium heat, add the 2 teaspoons oil and allow to heat.
