81. French Toast with Strawberry Passionfruit Sauce

Before you begin:

Kitchens can be dangerous so make sure you have just read the Kitchen Safety Checklist.
Check with Mum or Dad that you are allowed to cook.
So the food doesn’t get any germs, wash your hands with warm soapy water and dry them well.
Read the recipe through before you begin and get out all the equipment and ingredients you will need.
Don’t forget to have fun, and the best cooks ALWAYS clean up their mess.

Here’s what you use
• large bowl
• whisk
• cup measure set
• teaspoon measure set
• butter knife
• frying pan
• egg flip
• chopping board
• small bowl
• dessertspoon
• sieve
• kitchen knife

Here’s what you need
• 4 eggs
• 1/3 cup milk
• 1 teaspoon cinnamon
• 1 tablespoon castor sugar
• 8 slices white toast bread
  (preferably 1 day old)
• 25g butter for frying (divided into
  eight knobs)
Sauce
• 170g can John West Passionfruit Syrup
• 1/2 punnet of strawberries, halved or quartered

Here’s how to do it

  Step 1   Step 2   Step 3

Step 1
To make sauce
, place strawberries in a sieve and wash them under cold water. Remove their little green “hat” (calyx) and cut the strawberries into halves or quarters depending on their size. Place in a bowl and pour in the passionfruit and, using a dessertspoon, mix well.

Step 2
To make the toast, break eggs into a large bowl, add milk, cinnamon and sugar and whisk for 1 minute or until well combined.

Step 3
Place frying pan onto hotplate and heat on medium. Add a small knob of butter and allow to melt. Take a slice of bread and dip into the egg mixture. Place the soaked slice of bread into the pan and cook on one side until golden brown. Using an egg flipper, flip toast over and cook the other side. Remove from pan and place onto a warm plate and cover with a piece of aluminium foil. Repeat with remaining slices of bread until all the toast is cooked and egg mixture is finished.

  Step 4

Step 4
To serve, cut toast in half and arrange 4 halves on each plate. Spoon over strawberry-passionfruit sauce and lightly dust with cinnamon sugar if desired.

Serves: 4

Setting Up Time: 6 minutes

Cooking Time: 20 minutes

HOT TIP:
1. Do not soak the bread for too long as it will become soggy and won’t cook
    through.
2. Between cooking each slice of toast wipe the pan with paper towel to remove any
    excess butter.
