Makes: 4 sandwiches
Heres what you need:
2 x 100g cans John West Tuna in Brine,
drained
1 x 125g can Edgell Corn Kernels, drained
1 stalk celery, finely diced
1/3 cup grated carrot
2 tablespoons mayonnaise
2 tablespoons sour cream
2 teaspoons lemon juice
Pinch salt and pepper
4 slices wholemeal bread
4 slices multigrain bread
1/4 cup creamed cheese
Heres how to do it:
| 1. |
Drain John West Tuna in Brine using a sieve and press into the sieve to squeeze out any excess water. Place into a medium bowl, then drain the Edgell Corn Kernels and add to the tuna bowl along with the celery and the carrot. Mix with a metal spoon to combine. |
| 2. |
In a smaller bowl combine the mayonnaise, sour cream, lemon juice and salt and pepper, then add the mayonnaise mix to the tuna mix and stir with a wooden spoon to combine. |
| 3. |
Take the bread slices and place them on a chopping board. Using a ginger bread man cookie cutter cut shapes out of each slice of bread and discard the crust. Thinly spread each slice of bread with cream cheese and evenly divide the tuna mix between the wholemeal slices and spread right to the very edge. Top with the multigrain slice and serve. |
