57. ORANGE PASSIONFRUIT CAKE

Before you begin:
Kitchens can be dangerous so make sure you have just read the Kitchen Safety Checklist.
Check with Mum or Dad that you are allowed to cook.
So the food doesn’t get any germs wash your hands with warm soapy water and dry them well.
Read the recipe through before you begin and get out all the equipment and ingredients you will need.
Don’t forget to have fun, and the best cooks ALWAYS clean up their mess.

Here’s what you need:
• 90g butter, melted
• 1 cup caster sugar
• 1 1/4 cups self raising flour
• 2 eggs, lightly beaten
• 1/2 cup low fat milk
• Rind from 1 orange
• 175g can John West Passionfruit
• 1 1/2 - 2 cups icing sugar

Here’s how to do it:
1. Place butter, sugar, flour, eggs and orange in a bowl. Mix to combine then beat on high speed for 3 minutes with electric beaters.
2. Spoon into a lined ring or loaf pan, lightly fold in half the John West Passionfruit. Bake in a preheated oven at 180°C for 35-40 minutes or until cooked.
3. Stand cake in pan for 5 minutes before turning out to cool.
4. Mix remaining passionfruit with icing sugar. Pour over cake.
