56. MOUNTAIN BREAD NORI

Before you begin:

Kitchens can be dangerous so make sure you have just read the Kitchen Safety Checklist.
Check with Mum or Dad that you are allowed to cook.
So the food doesn’t get any germs wash your hands with warm soapy water and dry them well.
Read the recipe through before you begin and get out all the equipment and ingredients you will need.
Don’t forget to have fun, and the best cooks ALWAYS clean up their mess.

Serves: 4–5

Here’s what you need:
• 425g can John West Tuna in Brine
• 2 tablespoons low fat mayonnaise
• 3 sheets of wholemeal mountain bread
• 4 lettuce leaves, shredded
• 1 avocado, sliced
• 1 small cucumber, cut into sticks
• 1/4 red capsicum, cut into strips
• Extra low fat mayonnaise

Here’s how to do it:

1. Drain John West Tuna well squeezing as much moisture out as possible. Place in a bowl and combine with mayonnaise.
2. On one sheet of mountain bread place some of the lettuce to cover two thirds of the sheet.
3. Form a log of tuna down the centre of the lettuce. Top with avocado, cucumber and capsicum. Spread a little mayonnaise over the plain end of the bread.
4. Starting with the filled edge roll up bread carefully but firmly. Repeat with remaining bread and filling to make 3 rolls. Cut each roll into 6 pieces.

Setting Up Time: 20 minutes

HOT TIP: Mountain bread rolls can be wrapped in plastic wrap and refrigerated overnight. Try adding grated carrot.
